1 Package English Muffins (any type, though my preference is sourdough)

1 c Sharp Cheddar Cheese (grated)

1 Can Black Olives (chopped)

1 c Mayonnaise

1 c Green Onions (chopped, both white & green parts)

2 tbsp Curry Powder (amount varies to taste)

Lightly toast halved English muffins.

Mix all remaining ingredients and then spread evenly on all toasted halves.  Bake in 350º oven for approximately 10 minutes (until cheese is bubbly and brown).

Once cooled for a few minutes, quarter each muffin half and serve!

Personal Note: I discovered this recipe with my wonderful friend, Diane Vilardi, in an old cookbook she had on her shelf.  The accompanying note from the author read, “We just started calling these canapes ‘What’s In This?’ because it was the first thing everyone asked when they tried them!”

I’m passing this recipe along in Di’s memory.  She lost her long battle with cancer in December 2010.
